How to Make These Crispy, Tater-Tot Hash Brown Cups with Sausage
Ingredients Notes:
Frozen Tater Tots: If you need these to be gluten-free, ensure you look for a gluten-free certified label on the packaging.
Shredded Cheese: This can be regular cheese or non-dairy cheese. Use what you prefer!
Cooked Sausage: I used pre-cooked chicken sausage patties, browned them in a skillet then chopped them into cubes. Pork or turkey sausage would work great in this recipe as well, just ensure you pre-cook it before adding it to the egg and pesto mixture.
Basil Pesto: I used our Fresh Dairy-Free Basil Pesto with Toasted Pine Nuts. However, if you prefer a pesto that has cheese, you can absolutely use your own recipe or (a store bought pesto).

Step 1: Bake the Tater Tots:
Preheat your oven to 425°F. bake the tater tots on a sheet pan for 15 to 18 minutes until the tots are crispy and golden-brown.


Step 2: Press the Potato Cups
Spray 6 wells of a standard muffin tin with non-stick cooking spray. Divide your 3 cups of frozen tater tots evenly among the 6 wells then bake. I recently got the Our Place Clean Ceramic Baker's Kit and have been loving the 6-cup muffin pan for small batch recipes. Immediately press the hot tater tots with a shot glass firmly down and up the sides of each well to form a solid potato cup.


Step 3: Fill with Pesto Egg Mixture and Fill the Cups:
Whisk 3 large eggs and 1 tbsp pesto together in a small bowl until thoroughly combined. Carefully pour the pesto-egg mixture evenly into the 6 potato cups (approximately 1/8 cup mixture in each).



Step 4: Add Toppings:
Divide the cubed sausage evenly among all 6 cups, pressing it gently into the egg mixture. Sprinkle the shredded cheese over the top of only 3 of the cups, leaving the other 3 cheese-free.



Step 5: Final Bake and Cool:
Return the muffin tin to the oven and bake at 425°F for 10 to 12 minutes until the egg filling is fully set and the cheese is melted. Let them cool in the pan for 5 minutes before using a butter knife to gently lift them out.
