Yes, it is 100% naturally dairy-free and gluten-free. Full-fat canned coconut milk creates a rich, velvety texture without butter or heavy cream, and tamari is soy sauce made without any gluten.

No, I would not use these options. It is best to use full-fat canned coconut milk for this recipe. Light canned coconut milk or carton coconut milk (such as the kind you would use for coffee creamer) contains much higher water content, which will make the sauce watery rather than thick, rich, and velvety.
How do I store and reheat leftovers?

How to Make this Creamy Coconut Lime Chicken (Gluten-Free, Dairy-Free)

Step 1: Season the Chicken
Pat the chicken thighs thoroughly dry with paper towels. Mix the salt, black pepper, garlic powder, onion powder, cumin, and paprika together, then sprinkle evenly over both sides of the chicken.

Step 2: Sear the Chicken
Heat the coconut oil in a Lodge Essential Enamel Cast Iron Braiser or large skillet over medium-high heat. Add the chicken thighs and sear undisturbed for 4 to 5 minutes per side until golden brown. I like to cover with a Splatter Screen to keep my stove from becoming an oily mess. Transfer the chicken to a plate and set aside. You should have some brown bits at the bottom of the pan, this is the base of so much great flavor!

Step 3: Sauté the Aromatics
Reduce the heat to medium. Add the chopped onion to the same skillet and cook until softened, about 2 to 3 minutes. Stir in the minced garlic and cook for 30 seconds.

Step 4: Build the Sauce
Pour in the ¾ cup chicken broth, scraping up all the browned bits from the bottom of the pan. This is the base of your sauce and creates a great depth of flavor. After searing the chicken thighs to get a golden brown crust, this deglazes the pan to lift all those delicious browned bits off the bottom. Stir in the coconut milk, 2 tsp lime juice, 1 tsp lime zest, tamari, and honey. Bring to a gentle simmer.

Return the chicken and any collected juices to the skillet, spooning sauce over each piece. Cover and simmer gently for 8 to 10 minutes, until the chicken reaches an internal temperature of 165°F.

Step 6: Simmer the Chicken
Remove from heat and top with fresh chopped basil before serving.
