You really can't go wrong with crispy roasted golden potatoes! They are great as a side dish any time of year! This summer, we are growing several varieties of herbs in our garden. We have basil, oregano, sage, and a few varieties of thyme (including lemon thyme). For this One-Pan Crispy Garlic Herb Roasted Potato recipe, we decided to include a regular french thyme variety and oregano. These fresh chopped herbs are combined with pressed garlic cloves, good olive oil, paprika, and a good helping of salt and pepper to deliciously flavor the golden potatoes.
This is a super simple, one-pan dish that is naturally gluten-free and dairy-free. These crispy roasted potatoes come out incredibly savory (without the need for any butter)! I used our Lodge Essential Enamel Cast Iron Braiser pan that I love so much. It bakes potatoes to perfection, soft and creamy on the inside and crispy on the outside (and it is really easy to clean).

Why aren't my roasted potatoes getting crispy?
The most common reasons are overcrowding the baking sheet and moisture. Ensure your potatoes are thoroughly dried after cutting, use enough oil to coat them evenly, and leave enough space between the pieces so they roast instead of steam. Do not pile them on top of each other.
Do I need to boil the potatoes before roasting?
No, you don't. Cutting the potatoes into small 1-inch pieces and roasting them at a high temperature (425°F) gets them crisp on the outside and soft inside without the extra step of parboiling.
What type of potato works best for crispy oven roasting?
Small Yukon Gold potatoes are my favorite potato to use in this dish. They roast to the perfect balance of creamy texture and crispy edges. Small red potatoes or russet potatoes will also work. If you use red potatoes you should, add 5 minutes extra as they typically take a little longer to roast.
Can I use dried herbs instead of fresh?
Yes you can! If using dried rosemary and thyme, substitute 1 teaspoon of dried herbs for every 1 tablespoon of fresh herbs.
How should I store leftover roasted potatoes?
Allow the crispy roasted potatoes to cool completely to room temperature before transferring them to an airtight container. Store them in the refrigerator for up to 3 to 4 days.
What is the best way to reheat these roasted potatoes so they get crispy again?
Don't use the microwave (it will make them soft and soggy!) For maximum crispiness, reheat leftovers on a baking sheet in a preheated oven or toaster oven at 400°F (200°C) for 8–10 minutes. You can also toss them into an air fryer at 380°F (190°C) for 3–5 minutes until warm and re-crisped.

Cheesy Garlic Herb Potatoes
Sprinkle 1/4 cup of nutritional yeast or parmesan over the potatoes during the last 5 minutes of roasting.(dairy or dairy-free cheese both work, depending on your dietary preferences)
Spiced Potatoes
During Step 2, toss the raw potatoes with a small pinch of red pepper flakes. Once fully roasted, finish with 1/4 tsp fresh lemon zest right before serving
Loaded Potatoes
Top your finished roasted potatoes with chopped crispy bacon (regular or turkey bacon), green onions, and a few small dollops of sour cream (dairy or dairy-free sour cream both work, depending on your dietary preferences)

Step 1: Preheat Oven
Preheat your oven to 375°F. Grab a shallow braiser pan. I love using my blue Lodge Essential Enamel Cast Iron Braiser for this dish. It works so well for one pot meals. I've found that putting the lid on during the initial bake helps ensure the potatoes turn out nice and creamy, then it can easily be removed for the final potato crisp up!
If using a a sheet pan, line it with parchment paper and get some aluminum foil out.
Step 2: Toss the Ingredients with Potatoes
Place your quartered potatoes directly into a medium size bowl. (I love these beautiful colored Pyrex Tinted Glass mixing bowls! They come in a set of 3 different sizes and are great for baking.)
Drizzle the olive oil directly over the potatoes. Scatter the garlic, fresh thyme, fresh oregano, paprika, salt, and black pepper over the top. Using your hands or tongs, toss everything thoroughly until the potatoes are evenly coated. Spread them out in a single layer in your baking vessel.

Step 3: Covered Bake
If using a braiser pan in the oven, put the lid on and bake for 25 minutes. If using a parchment-lined sheet pan, cover the pan tightly with a sheet of aluminum foil. This steam-cooks the potatoes so they get soft and creamy while letting the garlic melt into the oil without burning it.

Step 4: Uncover and Crisp the Potatoes
Remove the lid (or foil). Increase the oven heat to 400°F. Roast uncovered for another 20 to 25 minutes, stirring once halfway through, until the edges are beautifully golden, crisp, and the garlic is soft. Serve warm and top with fresh thyme if desired.
