Mediterranean Quinoa Grain Bowls with Chicken and Avocado

This recipe changes the meal prep game completely. We are talking about ultra-juicy, whole-roasted chicken breasts packed with savory garlic and bright citrus, layered over fluffy quinoa simmered in rich bone broth. Tossed with creamy cannellini beans, crisp raw bell peppers, and briny green olives, it is a clean, dairy-free power meal the whole family will actually look forward to eating. Best of all, it is designed to be enjoyed completely cold or at room temperature.


Note for Picky Eaters: My kids are in a stage (4 and 6 years old) where they don't always like their foods mixed together. No problem! Since they'll still eat all the components of dish, I figured de-constructed grain bowls are the way to go! Dinner was a success!



Quick Reminder for those who are following Gluten-Free Diets: While quinoa itself is completely gluten-free, always check the packaging for a "Certified Gluten-Free" label. Quinoa is sometimes processed or packaged in facilities that also handle wheat, which can lead to accidental cross-contamination. This label guarantees the grain was kept free of contact with other gluten-containing grains. Avoid Bulk Bins: Do not purchase quinoa from grocery store bulk bins where cross-contamination with other grains is possible.

How to Make this Savory Quinoa Grain Bowl


Start by preparing our delicious Zesty Lemon Herb Meal Prep Chicken Recipe (Gluten-Free and Dairy-Free). This chicken recipe is incredibly delicious in these grain bowls, but is also so versatile in salads, pastas, and other recipes.


Next, cook up some quinoa. Any quinoa will work, but I love our nutrient dense, Fluffy and Savory Bone Broth Quinoa recipe. This recipe is also delicious as a side with salmon or sprinkled into a salad.


Assemble the Grain Bowls: In a large mixing bowl, combine the completely cooled bone-broth quinoa, the rinsed cannellini beans, the diced bell peppers, and the halved tomatoes.


Tip: Make sure you adequately rinse your cannellini beans. This removes most of starchy liquid they are packed in which can help reduce digestive discomfort. I also find they just taste and have a better texture when rinsed.


Prepare the Dressing: In a small bowl, whisk the olive oil, lemon juice, garlic powder, salt, pepper. Pour this dressing over the quinoa and vegetables and toss gently to coat. This gets even better if you let it sit for 5-10 minutes as it helps the quinoa absorb the dressing (but not required!).


Last, fold in your cold, sliced lemon herb chicken and green olives and top with your diced avocado. Enjoy!
