My family loves eating chicken and we eat it a lot. It's so helpful to have flavorful chicken readily prepared to use in a variety of recipes through out the week. Slice it up for taco night, fold it into a crunchy quinoa and veggie bowl, or pair it with crispy roasted Brussels sprouts for a cozy family dinner.

How to Make this Zesty Chicken


Create your Marinade: In a large mixing bowl combine the oil, lemon juice, lemon zest, minced garlic, onion powder, herbs, salt, and pepper. Whisk vigorously until the oil and lemon juice are fully emulsified.


I love the brightness that lemon zest provides. It really amplifies the lemon flavor in the chicken when cooked.



Marinating the Chicken: Add the marinade to the chicken, and make sure to coat every piece. Seal up the container and place it in the refrigerator for 30-minutes.

After 30-minutes, take the chicken out of the refrigerator and stir it around. This redistributes the settling garlic, herbs, and oil over the meat. Then put the meat back in the fridge to finish up marinating for 30-more minutes.


Make sure you do not exceed 1 hour of marinade time. I have tested this recipe with longer marinade times and the chicken can start to get a bit mushy.



Preheat your oven to 400°F (205°C). Arrange the chicken in a single layer on parchment-lined baking sheets. Do not overcrowd the pans. Bake cutlets for 25 to 30 minutes until the internal temperature hits 165°F (74°C).
